HEALTHY LUNCH IN 20 MINUTES
A few months ago wrote about living with Arthritis and my eating restrictions. I always envy those that are able to quickly grab a cheese sandwich for lunch or buy a prepared salad. Unfortunately most store-bought salads have added vinegar and I have to avoid bread as well as cheese..
I put the quinoa (about 2 cups) in a pot, covered it with water to boil gently while I chopped the red onion, ginger, garlic and capsicum very finely and gently softened it in some coconut oil in the pan over a low heat.
After softening these vegetables, I added the broccoli for a short while so that it remained crunchy.
I then chopped fresh herbs from the garden with the remaining half a cucumber
I then drained the quinoa into a sieve, running hot water through it and added it to the softened vegetables in the pan. After mixing it all together, I added the chopped herbs and cucumber, freshly squeezed lemon and olive oil, salt and cracked pepper.
After plating, I added the sliced avocado. It was such a delicious lunch and took only 20 minutes.. Fortunately, Mr R-I also enjoys quinoa ..

This looks and sounds so very good. I rarely have lunch at home because I'm still working, but I think about the time, in the not so distant future, when I will be able to peruse the fridge for the makings for a healthy lunch. No more sandwiches!
Sounds great. Love vegetables and salads. Must try it. Would first have to buy some quinoa – have never used it myself. Have only eaten in restaurants. However, I use olive oil as when we lived in Colombo all food was cooked in coconut oil and our GP told us it was the major reason there was such a problem with heart disease there. Have you heard that olive oil affects arthritis? PS Love your plates – the green colours work so well with salads and veg. Pammie
Looks delicious Jenny, I make a salad for me every day and a sandwich for my husband. I do long for cooler days though and a hearty bowl of soup. Sue Fogarty
